Phillips Brewing will be taking over the taps July 12th as part of Train Station Pub’s Tap Takeover series. This classic brewery always delivers on taste.
After several years of slugging it out in the brewing community working for other brewers, Matt Phillips (the patriarch of Phillips Beer) decided it was time to make beer of his own in 2001.
Phillips’ first brews released were quite unconventional, particularly in the conservative beer climate of the very early aughties. The brewery launched with an Espresso Stout, a Raspberry Wheat Ale, and a boldy-hopped IPA; a suitable foreshadow for the creativity to come.
Current Beer Lineup
Pilsner – patiently cold aged, Phillips Pilsner is meticulously engineered to be clean, crisp and bright.
Longboat Porter – Longboat pours a beautiful dark brown and oozes bold chocolate flavour. Its rich velvet texture smoothes the senses.
Electric Unicorn IPA – a white IPA that features sweet banana and fruit flavours balanced against a citrus hop background that finishes dry.
Bottle Rocket ISA – a big hop nose and bright mouthfeel give way to sweet citrus hop flavours, accented with a hint of pine.
6IX IPA – multiple Kettle hop additions are followed by two separate dry hop regimens, packing 6 lb’s of hops into each barrel produced.
Citricity – freshly peeled grapefruit sparkles off the nose, with crisp citrus flavours set against a backdrop of fruit-forward hops.
Short Wave Pale Ale – pouring sunset orange colour, a medium malt body is electrified with citrus hops and dialed to balance.
